Interesting interpretation of the rules. There is no impact of the pitstop on the race result at all if you pit on the last lap after the checker? I would have to agree that a pitstop after the checker on the last lap is not a pitstop "during" the race to change tire's.
When this was used successfully in an actual F1 race, I think the pit stall was before the start finish, so pitstop was still during the race. I think they changed the rules after that to disallow it hat tactic on the last lap.
